RECIPE: Hot Chicken Skewers (Low Carb)
Here's another quick, low carb recipe for chillin' and grillin' this summer. These hot, buttery chicken skewers are simply irresistible! And, with a good amount of hot sauce, they've got a great kick!

Hot Chicken Skewers (Low Carb)

Serves 2. Ready in 15 minutes. IMG_3024 Only 7 carbs per serving. 

Ingredients:

Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 tsp paprika
  • 1 teaspoon cayenne powder
  • 1 teaspoon garlic powder
  • Pinch of salt
  • 1 teaspoon cracked black pepper
  • Baby dill pickles
Butter Glaze:
  • 2 tablespoons unsalted butter
  • ¼ teaspoon paprika
  • ¼ teaspoon cayenne
  • ¼ teaspoon black pepper
  • 1 teaspoon brown sugar (You can use Splenda, if you prefer)
  • Hot sauce

Instructions:

1.  Slice the chicken into small, equally-sized pieces and place them in a bowl. 2. Add the olive oil, paprika, cayenne, garlic powder, and black pepper to the bowl. Low Carb Chicken Skewer 1 3.Coat the chicken well and marinate it for a few hours (preferably overnight). 4. Add a dil pickle to the end of each skewer. Then, add the chicken pieces. The last thing to be added should be a pickle. 5.Preheat the grill to high. 6.Place the chicken on top and grill on each side. Low Carb Chicken Skewer 2 7. After grilling, allow the chicken skewers to cool on a plate. 8. Now, you can start to make the butter glaze. Melt the butter in a pan (or the microwave) add the paprika, cayenne, black pepper, brown sugar, and hot sauce. Use a whisk to incorporate the ingredients well. Low Carb Chicken Skewer 3   9.
